Recipe – Carrot Cookies

Carrot Cookies
2 c. diced carrots 1 t. vanilla
3/4 c. butter 2 c. flour
1 c. Sugar 1/2 t salt
1 egg 2 t. Paking Powder
1. Cook carrots in boiling salted water till tender.
2. Drain & mash (1 c.mashed carrots)
3. Cool.
4. In mixing bowl cream butter & sugar add egg & vanilla. (Beat until fluffy)
5. Stir in carrots.
6. Finally mix in dry ingredents.
7. Drop by teaspoonfulls on ungreased cookie sheet.
8. Bake at 3:75 10 to 12 min. Do not overbake.
9. Spread with powdered sugar icing.
